You know how a great way is to cover up an ugly chain link fence here in California? Plant a passion fruit vine and let it climb all over it! Remember when boys from The Challenger's Manhood Program each tasted one for the first time in our garden here? Today for our cooking class at The Challenger's Boys and Girls Club cooking class we taught them how to turn this lovely fruit into a versatile vinaigrette which can be stored for up to 2 weeks and used as a salad dressing and a marinade for chicken or fish. 1 cup passion fruit juice, strained (no seeds)
1 tablespoon mustard
2 oz honey
sea salt, black pepper
1 cup olive oil
1. mix passion fruit juice, mustard, honey, herbs, salt and pepper in a blender or whisk briskly
2. slowly drizzle in olive oil
3. taste for seasoning, ready to go!
